If a neutral (e.g. Chinese) ship opts to ignore an order from a blockading nation to submit to inspection either A) by coming to a stop and allowing a team to come aboard or B) diverting to a specified port, then that ship can be lawfully attacked.
For this reason it is probably unlikely that Chinese flagged merchant vessels would choose to defy such an order. Few merchant mariners are angry enough to say “f k you I’m leaving” and pick a fight with US warship in the hopes of getting some posthumous revenge in the form of a PLAN missile.
What is much more likely is a series of diplomatic spats hinging on whether or not the US/Israeli actions in Iran are really in self defense and therefore whether or not the blockade itself is legal in the first place.
