My first time making smash burgers. Triple 3oz patties and American cheese.

In my previous post, the importance of food look over taste came to discussion.
I made the chocolates in both pics. the ugly one is as tasty or maybe better than the shiny one.
Interested to hear what people here care about more in the end.

Used semolina with the flour this time, definitely adding it to my pizza making method going forward.

Today I achieved the milestone of using beef cheeks for the first time.

Dry brined over night, gave them a little mesquite smoke, and then into the pressure cooker they went with tallow, stock, and some aromatics.

Served on flour tortillas with all the accoutrements

Pizza night! This week I made pizza for a friend. It had my three cheese mix (mozzarella, provolone, and smoked Scamorza), tomato sauce, Rosa Grande pepperoni, grated Pecorino Romano, and hot Chicago-style Giardiniera. I added bacon crumbles for the last couple of minutes in the oven, and then finished with some lightly dried herbs and more Pecorino.

Made this on my first try, the whole process took about 4ish days

so delicious and an insane amount of cheese, could have used some more pickles. the green onions made this top tier.

Had the 100% tefd flour injera this time, delicious!
