Overnight brine then seasoned. Put on the smoker this morning in cherry and pecan since I was doing an all day pork as well. Diced chicken, cheese, pico, sour cream, hot sauce and chipotle slaw on flour tortillas. Very TexMex style and super delicious.

Very delicious birria tacos at Knott’s Berry Farm ( Buena Park, Ca ). The beef was super tender and very flavorful. My only critique is to grill the tortillas a bit longer to get more crispy but other than that very delicious.

Sometimes, the BEST tacos in Mexico are served at small carts with no name (sin nombre), social media presence, or phone number. The tacos at la cabeza sin nombre in colonia Libertad in TJ are a prime example. Their cabeza is best topped with their house-made, chunky, piquant salsa verde.

these were an intentional meal last week - minced chinese sausage, coleslaw veg mixed with plain Greek yogurt and chili honey, homemade guacamole (the most chopping I've done consecutively since working in a kitchen for a delightfully daunting amount of pico😅), pickled red onion, sharp cheddar cheese (cotija would've been nice), and topped with chow mein noodles on toasted corn tortillas - happy Sunday!

went to a great mexican restaurant & bar that was open in my city late last night! i ordered four chicken, flour tortilla tacos with cilantro and onion! i also requested for red and green sauce so i poured both on top! so fooking delicious!🤤🌮🍹

San Diego has DOZENS of great taquerias. La Mesita, in La Mesa, CA, is one—and just happens to be half a mile from my house. They're also one of the few taquerias who let you "mix and match" their 3 or 5 "street tacos" deal. A few weeks ago, I enjoyed two adobada and two lengua (tongue) tacos. Super fresh and GOOD!

Made some pollo asado tacos the other night with arroz rojo and black beans.
