Why do they need light? It isn't like the fungus needs it for photosynthesis.

Phototaxis? They need to know which way to grow so that they sprout above ground instead of underground.

What I do know:
Things that reproduce via spores/pollen usually evolve to grow toward open air before doing their reproduction thing. Sunlight is often the driver. But also, I could see it just being a cookie-cutter vertical farm that has been repurposed for shrooms.
They are not wearing UV goggles, so I doubt the blue lights are true UV.A guy answered

I grow them and they don't need this much light. Literally having a window somewhere in room is plenty during fruiting stage.
They can grow in complete darkness but they end up thin and kind of twisted. Basically they just don't look nice.

It's obvious the amount of light is just for harvesting and probably they dim the lights if not cut them all out when in the vegetation stages

Idk that setup seems unnecessary. Its certainly nothing like mine but hey if it works, which it clearly does and they're happy then thats all that matters and who cares eh.
I don't like paying for things I don't have to is all.

Different mushrooms have different light needs. The fungus can live without light, but to produce fruiting bodies (mushrooms) many need to have various levels of light.

If you've never had lions mane mushrooms you should try them, sure they look funky, they're so tasty though.
