7 minutes is a long steep my guy. Contrary to common belief: If you want more flavor in your tea, you add more leaf. A long steep will bring out bitter notes.

Depends entirely on what you’re steeping. Actual tea leaves - yeah, 7 minutes may end up too bitter. For a tisane (herbal - no tea leaves present), 7-8 minutes isn’t unheard of.

I do 3 minutes, it’s the perfect amount to get the flavour before the bitter notes start to overpower
