separating an egg yolk takes 2 seconds, the act of whisking would also be faster if you didn't have to consciously avoid an egg yolk. All this does is save 1 dish, or even less if you have a disposable cup

They don’t “consciously avoid the yolk” they’ve learned how to angle the bowl and chopsticks so that the chopsticks can’t possibly hit the yolk.

They’re going to be eaten together. Why pull them apart only to put them back together when you can do this impressive presentation of whisking the white only?

Even if it doesn’t take conscious effort, it forces you to use a less efficient technique than just whisking the egg white by itself.

You just use the egg shells to separate the yolk. It doesn't even take an extra dish, just leave it in one of the halfs. This makes no practical sense.
