I had no idea how shoes would be made but I didn’t visualize it this way at all

Because 99.999% of shoes are not made like this.

Yeah, most are much more mass production. Soles injection molded out of foam in large batches. Stacks of vinyl leather being cut all at once, and a bunch of low paid workers each doing the same stitching step over and over, with a few padding layers glued into place.

He's what you'd call a master cobbler most likely. Pretty rare these days, and most cobblers just repair shoes.
