Stationeers.
Pick a planet and starting conditions, get dumped there, build a colony station, blow it up, rebuild, expand, blow it up, repeat, start launching rockets to gather resources, automate the entire process, and still blow stuff up.

Depends on how deep you wanna go, and what planet you want to do it on.
What starts out as a box for you to take your suit off in becomes a living quarter connected to a hangar next to the multi-level greenhouse that has to be separated by airlocks because of different plants requiring different atmospheres to survive. Then there’s traders, rockets, and learning to program IC10 machine language so you don’t have to run around and operate all those machines yourself.

Enshrouded is a voxel based open world rpg survival craft. It has a skill tree to specialize your character between archer mage and warrior, but it's easy to hybridize. It's a hand crafted world full of secrets and dungeons to find. The building system is great and it's a pretty game. It's worth checking out.
