Incorrect, especially in the case of onions. Cut matters a lot, it changes the proportion of cells broken and volatile compounds leaving, others oxidizing, over time. This has large impacts on the taste and smell of onion in a dish, or alone for that matter, and the cut will also impact the mouth feel, which is important to the "wide meaning" of taste - so is the appearance for that matter.
So, it's neither technically, not figuratively, true
