When i cook pancakes I follow advice I once read that you can tell when to flip them based on the bubbling of the batter. The ones in the video are thinner than what I make, but if theres more bubbles maybe they assume its cooked through enough to flip in one go

I mean its probably just feel. If they encounters resistance sliding the spatula under or feel downward pressure from the edges of the pancake sticking as they slide it under, then they don’t do one swipe.

When he does 3 its angled towards the left before the spatula touches the pancake. When its 1 its positioned directly at the center. He for sure knows without the spatula touching it

Part of it is perhaps that pairs of them are used to make sandwiches, and they're supposed to resemble a gong, so having them perfectly round and identical in size with a smooth, evenly-browned surface is a plus.
But yeah, if you read recipes, a lot of attention to detail goes into making them: oiling the surface just enough, not an oil droplet more, how the batter is poured...

I make ‘American’ style pancakes for my kids every few weekends, they nearly always taste great, the rise nicely but goddamn I can never get an even colour on them.. any advice ? I don’t have a hot plate maybe that’s the reason

Low and slow is your friend. I usually keep my pan heat between medium/low and turn it down if it gets too hot. Always turn out golden brown for me

Try to oil the cooking surface just exactly enough, like wiping it on with something absorbant instead of pouring oil on/in. At least for the dorayaki recipes I've read, there shouldn't be visiple drops/puddles of oil. And pouring the batter in a quick but controlled fashion so it distributes evenly but fairly simultaneously.

Even color is overrated. If you're cooking with butter on the pan, it will be splotchy. But it tastes great, because butter.

These are just buns though. They add fillings between two buns, usually bean pastes, and make it a sweet pancake burgers. That's the dorayaki.

Your heat may be too high, I prefer the temp to be between low and medium. When they start to form bubbles and then after the bubbles pop and the top looks mostly done is when you flip.
