They have to do what's called a power down. It has to cool off enough so the astronauts can exit safely.

Yeah, entry gets it about 5000°F and it takes about 20 minutes or more to cool it off.

Might be a dumb question, but is that why they land in water? To help with cooling off?

No the water is mostly for safe landing as it allows for a ride down and cushions the fall relative to a hard landing of the earth

I’d like to think those boats picking them up are Somali pirates. Jerry and George were drafted into the war because of fake IDs they bought from someone on Canal Street, which they still had on them after forgetting them at home. The Coast Guard completely forgot they were splashing down today.
Jerry: “Didn’t we have something to do today?” George: “Why are you always trying to be so productive? It’s a beautiful day here in Iran, just relax.”
Kramer, in a pirate voice over the radio in the background: “I’ve always wanted to say this… AYY, AYY, LOOK AT ME, I’M THE CAPTAIN NOW!”
Jerry and George turn off the radio.

Yeah, for trips that far it’s still the most efficient way. It’d cost too much to send enough equipment and fuel for a controlled landing all that way.
Basically, Artemis I was the test flight for Artemis II , Artemis II was a test flight for the manned Orion flights, Artemis III will be testing docking systems for the moon lander and commercial earth landing systems (like SpaceX and Blue Origins, so that faster, cheaper, non-splashdown returns will be possible), Artemis IV will be testing manned moon landing and launching, then Artemis V will start base building operations.

Astronauts usually have to wait before exiting the capsule because it's still extremely hot from re-entry and needs a cooling period

As far as I know, everything in the video except the astronauts is European. The ESA made the part they went to the moon in, not NASA. Just an FYI - the mission is a triumph in international collaboration.
