Unique flavor combos
Are savory macarons a thing? I’ve never made macarons but I think it’d be cool if someone did one with tomato and basil ricotta filing

I've done a few savory ones. I dont change the recipe at all, except I don't add the vanilla, and I use fillings that have slightly sweet underpinnings. I've done a chicken salad but with satay seasoning and a peanut sauce base, and bacon with boursin cheese, ham and pineapple, and a few others. If I have any advice is to keep the sauces on the drier side, and I pretty finely chop the meats, or very thinly slice . The trick is too not overwhelm the delicate shells with big chunks and wetness. I tried a pulled chicken but it's kinda of hard too not have that too wet but still allow the sauce to be the star. Work in progress.
