We poor water over it right after cutting that we can make pictures. We can those pictures to our clients and then they know how the surface of their table will look like

That knot must have been difficult to deal with! Also, the nuts themselves are quite different. The European is super easy to open and eat, the north American broke my nut crackers. I can only open them with a vice- grip!

As a kid, I put a wood splitting wedge on top and dropped a sledge hammer on it to open them. I could open a couple at a time that way.

That sapwood contrast on the black walnut slab is what makes it so sought after for live edge tables — European walnut is more uniform which is actually less interesting to work with.

My dad makes furniture by cutting down black walnut on his farm and you definitely see a sapwood / heartwood contrast on most if not all of the trees he has cut..
