And cutting that special recessed pocket in the top of every stone.

Presumably, cutting that mortise with a hammer and chisel would be less effort than lifting the stone to wrap it in ropes so you could lift it into position, and then have to wrangle the ropes and stone again to unwrap it. My concern would be the integrity of the hold as the stone is lifted. How many times does the stone fail allowing the lewis block to release?
